Set within Eastwind Oliverea Valley’s main pavilion, Dandelion is the first full-service restaurant outside of the five boroughs from Eastwind Hotels Co-Founder and Food and Beverage Director, Daniel Cipriani, who was previously the Chef and Owner of Brooklyn restaurants including Urban Rustic, Sea Wolf, Playland Motel, Lodge, and Gemelli. After spending nearly 20 years running restaurants in NYC, Cipriani has spent the last few years exploring the Catskills and Adirondacks, getting in touch with nature, sharpening his foraging skills and building relationships with conscious local farmers. Using his new skills and relationships, Cipriani and Executive Chef Josh Bettencourt feature a “forage-to-table,” plant-forward, international comfort food menu at Dandelion. Standout dishes include House-Made Cavatelli, with wild mushrooms and parmesan and Lohikeitto, a Finnish style stew featuring steelhead trout.
