Bartolo

Bartolo is a Spanish restaurant located in the West Village, inspired by the tabernas of Madrid. The restaurant comes from the team behind Ernesto’s and is divided into three intimate, low-ceilinged dining rooms situated just below street level. The menu features pintxos, small plates, and larger format dishes, with highlights including anchoa y mantequilla, ajo blanco con melón, huevos fritos con patatas y gambas, and a blue cheese tarta de queso. Larger plates include arroz del día, rabo de toro, callos madrileños, and a bone-in New York strip sourced from Highland Hollow Farm. For parties of four or more, whole roasted suckling lamb and suckling pig are available by advance reservation. The bar program features a vermut-forward cocktail list with Spanish and international spirits, including a gin martini with dry vermut, a mezcal negroni with rosé vermut and rhubarb, a paloma with quince and pandan, and non-alcoholic options built on Aplos adaptogens.
