COA
COA is one of the main dining experiences at Dorado Beach, a Ritz-Carlton Reserve, serving breakfast and dinner daily. For Puerto Rico’s indigenous Taino people, the “coa” was the tool that allowed them to harvest the land. In reverence to this history, ingredients at COA are sourced seasonally and from local farms and purveyors, and signature dishes carry the flavor of Mi Brasa, a traditional Spanish wood-burning oven. Through dishes like Sancocho de la Abuela, a time-honored Puerto Rican beef stew, and a lavish Wagyu tasting menu, guests are able to experience Puerto Rico’s rich and storied culinary heritage. For guests looking for an even more elevated experience, La Cava offers guests private dining experiences within COA’s wine cellar which features 690 labels and 3,200 bottles. Dinners are hand designed by one of the 7 chefs on property, each sourcing inspiration from their background and personal tastes.
